Summer Garden Caprese Salad Recipe

Level: Super-Easy

Time: 15 minutes

I wanted to pop on really quick to share one of my family's favorite salad recipes. It's another recipe I've been making a lot lately, because I have tomatoes for days, thanks to my little home garden.

ICYMI: Check out our previous DIY Vegetable Garden Trellis and Zucchini Lasagna Recipe posts.

This salad is SO quick and easy to make (y'all are gonna laugh when you see how simple it is!); it's a nice filling and refreshing dish (perfect for a summer BBQ), and it's absolutely scrumptious!

In case you are new to our blog, or haven't noticed yet from my previous posts, I am not really one for paying attention to exact measurements. So, as you can see below, I have given guidelines for how much of each ingredient I generally use, but please take them as exactly what they are - guidelines. Adjust any and all parts of this recipe as necessary to fit your family and tastes.

INGREDIENTS

  • (6-ish) Tomatoes

  • (¼) Onion

  • (6-ish) ounces of Mozzarella Cheese

  • Salt & Pepper

  • Handful of Fresh Basil

  • Balsamic Glaze

INSTRUCTIONS

Step 1: Prep your tomatoes.

Pick tomatoes, rinse, and rough chop into chunks.

Step 2: Prep your onion.

Cut onion into thin slices.

Tip: Feel free to add other veggies and herbs, such as fresh cucumber and chives, from your garden. There is a lot of room for variety with this salad, and it's pretty difficult to mess it up - so go crazy and try new flavor combinations.

Step 3: Prep your cheese.

Slice mozzarella into bite-sized pieces.

Step 4: Prep your basil.

Stack basil leaves, roll, and chop into small pieces.

Step 5: Assemble your salad.

Combine tomatoes, onion, mozzarella, salt, and pepper.

Step 6: Garnish your salad.

Sprinkle with basil and drizzle balsamic glaze to your liking.

Step 7: Eat & enjoy.

Bon appétit!

Tip: As with most recipes, the fresher your ingredients are, the better this salad will be!
